Washoku - World Cultural Heritage
Since " Washoku " has been registered as World Cultural Heritage, many people
have an interest in Japanese cuisine or Japanese style cooking.
Today I would like to feature Yakumi - Japanese spices used for Washoku (Japanese food).
There are several kinds of Japanese spices like Shoga (ginger), Sansho seasoning
(Japanese pepper), or Karashi (Japanese mustard).
Have you ever seen a green paste served with Sashimi ( raw fish )?
That's Wasabi - Japanese horseradish and used as the ingredients to enhanse the taste
of Sashimi. And one more important role is sterilization of raw materials.
For children it tastes too strong, but most
of Japanese cannot do without Wasabi in
enjyoing Sashimi dish or Ochazuke bowl
(hot tea-poured rice).
